This recipe a sugar free twist on the classic Crème Brûlée by using coconut milk and Stevia. Adjust the sweetness according to your taste preferences. Enjoy this indulgent dessert while staying true to your no sugar lifestyle.

Ingredients
- 4 large egg yolks
- 1/4 cup pure maple syrup or honey (optional for a hint of sweetness)
- 2 cups full-fat coconut milk
- 1 tablespoon vanilla extract
- 1/4 teaspoon sea salt
- Stevia sweetener (liquid or powdered) to taste
- 1 tablespoons erythritol (for caramelizing)
Instructions
- Preheat Oven to 325°F (163°C). Place ramekins in a baking dish.
- Prepare Custard Base: In a bowl, whisk together the egg yolks and stevia until well combined and slightly thickened.
- In a saucepan over medium heat, warm the coconut milk until it just begins to simmer. Do not boil.
- Slowly pour the warm coconut milk into the egg yolk mixture, whisking constantly to prevent curdling.
- Stir in the vanilla extract and sea salt.
- Bake Custard: Strain the custard mixture through a fine-mesh sieve into a pouring jug to remove any potential curdled bits.
- Pour the custard into the ramekins in the baking dish.
- Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for approximately 30-40 minutes or until the custard is set around the edges but slightly jiggly in the center.
- Chill: Remove the ramekins from the water bath and let them cool to room temperature.
- Refrigerate for at least 4 hours or overnight to allow the custard to set further.
- Caramelize erythritol: Just before serving, sprinkle a thin, even layer on top of each custard.
- Use a kitchen torch to gently caramelize until it forms a slight browned top. Move the torch in a circular motion for an even finish.
